Kelli's Red Lobster biscuits

Want a dinner time twist on a a breakfast goodie?

Make a batch of Buttermilk Drop Biscuits.
Mince three cloves of garlic. I actually "mince" mine with an old-fashioned cheese grater (the kind most of kids don't even know exist!) Mix your garlic into your biscuit dough.
Add 3/4 cup of grated cheese. (or one full cup depending on your taste)
Blend well so your cheese and garlic are as evenly distributed in the dough as possible.

Bake the same way as you do the normal biscuits. And brush with melted butter as soon as they come out of the oven.

Serve warm with butter and your family will never ask for Red Lobster's Cheddar Biscuits again. Guaranteed!

Buttermilk Drop Biscuits

I have several different biscuit recipes, but I admit that most are a bit "heavy"....which is not a bad thing! However if you want biscuits that are 1) QUICK and EASY to make and 2) light enough to use to make Sausage Biscuits, this is the recipe for you! (And yes, using a whole stick of butter can still make LIGHT biscuits!)

INGREDIENTS:
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 TBSP sugar
  • 1/2 tsp. salt
  • 1 stick + 2 tbsp. butter
  • 1 cup buttermilk
  1. Preheat the oven to 425.
  2. Melt the stick of butter and let it cool.
  3. Mix together the dry ingredients in a separate bowl.
  4. Add the buttermilk to the melted butter and stir until clumps form.
  5. Stir the buttermilk/butter mixture into the dry ingredients, just enough until the dough pulls away from the sides of the bowl.
  6. LIGHTLY grease a baking pan--I use my Pampered Chef Pizza stone and it works GREAT!
  7. Drop balls of dough onto the baking sheet with a large spoon. (grease the spoon before and it keeps the dough from sticking)
  8. Bake until the tops are golden brown, 12- 14 minutes.
  9. While they are cooling on a wire rack, melt the remaining 2 TBSP of butter and brush the tops of the biscuits with the butter just before serving.
Use these in the normal way with yummy jam or jelly...
or after you put on a layer of jelly, add some breakfast sausage for a sausage biscuit that puts McD's to shame!

Christmas Dinner Rolls


I LOVE TO COOK, but I have never attempted to make my own rolls. I really and truly thought I could not! However, I tried this recipe as an option for our Christmas dinner rolls...and THEY ARE DELICIOUS!!!!

And I assure you...these are so yummy you will want to make them more often thanjust Christmas Day!





It is a little bit of work, and takes 2 days to prepare, but I promise...the look on your family's faces when they eat them will make all the work worth it!

Ingredients:

1 package active dry yeast (or in DK, use a little more than 3/4 of the refrigerated "gær" blocks)

1/4 cup warm water

1 tsp sugar

1/2 cup white sugar

2 eggs

1 cup warm water

1/2 cup vegetable oil

1 teaspoon salt

4 cups flour

Directions:

DAY ONE:
In a large bowl, stir yeast, 1/4 cup warm water, and a tsp. of sugar. In another bowl, beat eggs in 1 cup warm water; add oil and salt. Mix egg mixture into yeast mixture, and add the 1/2 cup of sugar. Gradually add the flour, one cup at a time. Cover with a damp cloth, and allow to stand at room temperature for 1 hour. Then place the bowl in the refrigerator (still covered) and allow to rise overnight. This dough is rather sticky, and will raise to at least twice its size!

DAY TWO:

Flour your hands and then divide the dough into 4 equal parts. Roll each section out into a circle on a floured board. Cut into pizza slice shapes, and roll slices large end to small end. You can also roll these into small balls if you prefer "round dinner rolls" instead of the "crescent roll shape". Place on greased flat baking pans, and allow to rise for 2 hours.

Bake at 375 degrees F (190 degrees C) for 8 minutes. Serve WARM WITH BUTTER!

Joe's Ranch Biscuits

Ingredients:
2 pkg. yeast
1/2 cup warm water
1/2 cup oil
1/3 cup sugar
2 cups buttermilk
4 1/2 cups of flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

Dissolve the yeast in warm water. Add oil & measure dry ingredients. Add small amount of dry ingredients to yeast mixture, alternately with small amounts of the buttermilk until completely mixed. Shape your biscuits and place on a pan - allow to rise in a warm place for 3-4 hours. Bake at 350 degrees for 30 minutes. Serve warm with butter.


The mixture can remain in the refrigerator up to 1 week and only take out the amount you plan to serve - allow to rise and bake.
